This cabbage soup recipe was recommended to me by a friend. I have no idea where the recipe originated from, but I can tell you that it is delicious and filling.
Cabbage Soup with Beef
A filling classic with lots of veggies too!

Equipment
- Large soup pot and lid
Ingredients
- 2 cans diced tomatoes
- 1 lb ground beef
- 5 cups chopped green cabbage
- 4 cups beef stock
- 1 cup riced cauliflower
- 1/2 cup diced onions
- 2 large carrots diced
- 1 TBSP olive oil
- 1/2 tsp salt
- 1 tsp oregano
- 1 tsp thyme
Instructions
- Add olive oil to large soup pot over medium heat.
- Add ground beef and cook until browned throuroughly.
- Add chopped onion and carrots. Cook for 5 minutes to soften.
- Add tomatoes, cabbage, riced cauliflower, thmye, oregano, salt, and beef stock. Stir together.
- Bring to a boil. Cover with lid. Reduce heat and let simmer for 20 minutes.
- Serve while hot and enjoy!
Notes
If you prefer you can cook a side of rice and add it to a bowl, then pour the soup over the rice. This makes the soup much thicker and also makes it into more servings to feed more people.
