Sweet Potato Treats

Sweet potatoes pack a serious punch when it comes to health benefits. They are highly nutritious and rich in antioxidants. Studies show that sweet potatoes can improve your digestive system, immune system, vision, and may even improve brain function! And this delicious, crowd-pleasing holiday treat is super easy!

You need 4 medium sweet potatoes (peeled and sliced into ¼” rounds), 2 tablespoons of melted butter, 1 teaspoon of maple syrup, kosher salt, 1 (10 oz.) bag of marshmallows, and ½ cup of pecan halves.

Preheat the oven to 400 degrees and toss the potato slices in melted butter and maple syrup.

Lay slices in a single layer on a baking sheet and sprinkle with salt.

Bake for 10 minutes, flip the slices and bake for another 10.

Switch the oven to broil and take the potatoes out.

Place one marshmallow on top of each potato slice and then broil until marshmallows puff up and start to turn a golden color.

Take those bad boys out of the oven, top with a pecan half, and ENJOY!
