This Veggie, Lentil, and Sausage Soup has been one of our family favorites for years! It’s full of veggies and quick to prepare. It’s great to eat year-round.
Veggie, Lentil, and Sausage Soup
Traditional lentil soup full of veggies and sausage.
Servings: 6
Equipment
- large soup pot
Ingredients
- 1 pound lentils
- 4 links chicken apples sausage
- 1 tbsp olive oil
- 1 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp cumin
- 1 can diced tomatoes
- 2 quarts chicken broth
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add onion, carrot, celery, and salt. Cook until onions are transparent, about 5 minutes.
- Add lentils, tomatoes, broth, peppers, and cumin. Stir to combine.
- Increase the heat to high and bring just to a boil. Reduce to a simmer, cover, and cook for 40 minutes.
- When the 40 minutes has almost passed, heat olive oil in a large skillet over medium heat.
- Slice sausage into rings and heat in the pan until edges are brown.
- Once lentils are tender, add browned sausage to the soup and eat hot.
Notes
You can also use a can of fire-roasted tomatoes instead of regular tomatoes and cayenne pepper.
