Ingredients
- 2 lbs ground beef
- 4 TBSP basil, chopped
- 6 TBSP sun dired tomatoes
- 2 TBSP minced garlic
- 3 tsp dijon mustard
- 2 TBSP olive oil
- 1 large red onion, thinly sliced
- 1/3 cup basalmic vinegar
- salt
- pepper
- goat cheese crumbles
- argula
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sliced onions and sauté until soft about 10 minutes. Add balsamic vinegar. Sprinkle with salt and pepper. Simmer until onions are deep brown, stirring occasionally, about 10 minutes. Remove from heat and wrap in foil to keep warm.
- Remove sun-dried tomatoes from oil and soak in warm water for 10 minutes. drain and chop into small bits.
- Combine ground beef, chopped sun-dried tomatoes, basil, mustard, garlic, and 2 TBSP balsamic vinegar. Form into patties. Grill, pan sear, or bake in an oven at 375 degrees for about 8 minutes or until done.
- Serve patties over a large salad of arugula, top with balsamic onions, and sprinkle with goat cheese crumbles.
