Equipment

  • microwave or saute pan

Ingredients

  • 1 rotisserie chicken
  • 8 corn tortillas
  • 2 cups shredded red cabbage
  • 2 tomatoes, diced
  • 2 avocados, wedged
  • 1 package shredded cheese or queso fresca
  • 1 bunch fresh cilantro
  • 2 small limes, wedged

Optional Chipotle Lime Sauce

  • 1/2 cup greek yogurt
  • 2 TBSP lime juice
  • 1 tsp sea salt
  • pepper
  • 1 TSBP minced garlic
  • 1/4 tsp chipoltl powder

Instructions

  • Shred chicken from the rotisserie chicken.
  • Warm tortillas in the microwave or pan until flexible.
  • Spread with optional chipotle-lime sauce or greek yogurt. Add other toppings as desired.

Notes

Optional Chipotle-Lime Sauce Directions:
Whisk all ingredients together until smooth.
