Rotisserie Chicken Tacos
Quick and healthy chicken tacos ready in minutes
Servings: 8 tacos
Equipment
- microwave or saute pan
Ingredients
- 1 rotisserie chicken
- 8 corn tortillas
- 2 cups shredded red cabbage
- 2 tomatoes, diced
- 2 avocados, wedged
- 1 package shredded cheese or queso fresca
- 1 bunch fresh cilantro
- 2 small limes, wedged
Optional Chipotle Lime Sauce
- 1/2 cup greek yogurt
- 2 TBSP lime juice
- 1 tsp sea salt
- pepper
- 1 TSBP minced garlic
- 1/4 tsp chipoltl powder
Instructions
- Shred chicken from the rotisserie chicken.
- Warm tortillas in the microwave or pan until flexible.
- Spread with optional chipotle-lime sauce or greek yogurt. Add other toppings as desired.
