A frittata is a nice size egg dish that can be used as a breakfast, brunch, lunch, dinner, or as a side dish. One great thing about frittatas is that you throw all the ingredients together in a baking dish, put it in the oven, and walk away while it cooks. No standing over the stovetop watching and stirring.
A second great thing about frittatas is that you can personalize them with just about any ingredient you like either baked into the frittata or added to the top after it’s cooked. There can be almost unlimited frittata recipes.
A third great thing, not that you need another reason, but frittatas are usually very budget-friendly.
I’m going to give you a few different frittata recipes here to help you get your creative juices flowing about what you might like.
Broccoli Frittata Recipe
Broccoli Frittata
Equipment
- non-stick frying pan
- casserole dish
- large mixing bowl
Ingredients
- 6 large eggs
- 1 medium red onion, chopped
- 1 tsp minced garlic
- 1 tbsp chopped parsley
- 2 cups chopped broccoli
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp olive oil
- 3 tbsp parmesean cheese
- butter or olive oil spray
Instructions
- Preheat ove to 350 degrees.
- Heat olive oil in a non-stick frying pan over medium heat. Add onion and cook until softened about 3 minutes.
- Stir in garlic, parlsey, and broccoli and cook until broccoli is bright green. (About 3 minutes.) Season with salt and pepper.
- In a large bowl, beat eggs well. Stir in broccoli mixture.
- Butter or spray your casserole dish edges and bottom. Pour the egg and broccoli mixture into the dish. Sprinkle with parmesean cheese.
- Bake uncovered 25 to 30 minutes until firm in the center when touched.

Spinach, Mushroom, and Sweet Potato Frittata Recipe
Spinach, Mushroom, and Sweet Potato Frittata
Equipment
- large skillet
- medium bowl
- whisk
- 8 x 12 baking or casserole dish
Ingredients
- 1/4 cup chopped yellow onion
- 1 can sliced mushrooms
- 1 TBSP olive oil
- 3 cups chopped spinach
- 6 eggs
- 1/4 cup milk
- 1/2 TBSP dijon mustard
- 1/2 tsp minced garlic
- 1/2 tsp italian seasoning
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 sweet potato, peeled and sliced
- butter or cooking spray
Instructions
- Heat oliveoil, onion and mushroom in a large skillet over medium heat until onion is translucent.
- Stir in spinach until slightly wilted. Remove from heat.
- In a medium bowl, scramble eggs, milk, mustradm seasoning, salt and pepper.
- Lightly butter or spray casserole dish. Place sweet potato slices on the bottom, and cover with the veggie mixture and then pour eggs over the top.
- Bake uncovered 45 minutes or when toothpick inserted comes out clean.

Sweet Potato and Sausage Frittata Recipe
Sweet Potato and Sausage Frittata
Equipment
- large skillet
- 8 x 12 baking dish
- medium or large bowl
Ingredients
- 4 links chicken apple sausage
- 1 TBSP olive oil
- 3 cups cubed sweet potatoes
- 1 chopped onion
- 1 cup milk
- 10 eggs
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 400 degrees.
- Cut sausage into rings and brown in skillet over medium high heat for 6 minutes. Remove meat from skillet.
- Add potatoes and onion to the skillet. Cook 7 minutes or until the potato is tender.
- Whisk together milk, eggs, salt, and peper in bowl.
- Butter or spray your baking dish. Add potatoes and sausage to the bottom and then pour egg mixture over the top.
- Bake for 15 minutes or until the center is firm and set.
