We tried a new recipe for some almost clean ranger cookies and they are amazing! I just baked them on Valentines and I’m already wanting to make some more!
You know we try to eat “clean” around our house. Real food. Real ingredients like vegetables, fruit, and meat.
So for my valentines gift to my family, I decided to bake them some our our favorite kind of cookies and keep them as close to possible as clean as I could.
Ranger cookies are something my husband introduced me to years ago. They have a little bit of the best cookie ingredients in them.
Part chocolate chip, part oatmeal, part coconut, and part pecans!
These cookies come out thin and moist. They’ll crumble with every bite.
Almost Clean Ranger Cookies
Ingredients
- 1 1/4 cup quick oats
- 1/2 cup flour
- 1 TBSP baking powder
- 1/4 tsp salt
- 1 cup melted coconut oil
- 3/4 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3/4 cup shredded coconut
- 1 cup Ghiradelli semi sweet chocolate chips
- 1/2 cup chopped pecans
Directions
Preheat your oven to 350 degrees F.
In a medium bowl mix together flour, oats, baking powder, and salt. Set aside.
In a separate large bowl mix together the melted coconut oil and brown sugar. Add in the eggs and vanilla extract. Mix until smooth.
Combine the flour and oats into the wet ingredients until well combined.
Add in the shredded coconut, chocolate chips, and pecans.
The mixture will look very wet. Don’t worry.
Drop the dough onto an ungreased cookie sheet.
Bake 9-11 minutes or until the edges of the cookies begin to turn a golden brown.
Remove from the oven and let cool.
Makes 24 cookies.
