Vegan 3 Bean Chili

Are you looking for a vegan chili option? This Vegan 3 bean chili is nice and spicy and also filling and delicious! We love to eat this in the cool Fall or Winter because it immediately warms you up from the inside. You can choose to use fresh diced tomatoes for less heat or use a can of fire-roasted tomatoes to bring the heat up.

3 Bean chili served over Sweet Potatoes

Ingredients

  • 1 can black beans (15 oz)
  • 1 can Cannellini beans (15 oz)
  • 1 can red kidney beans (15 oz)
  • 1/3 cup chili powder
  • 2 tomatoes, diced or 1 can of fire-roasted diced tomatoes
  • 1 onion, chopped
  • 4 TB EVOO
  • 1 TB salt
  • 6 cups water
  • 1 sweet potato per person

Directions

  1. Put all of the ingredients except the sweet potatoes on a large pot on the stovetop. Bring to a boil. Let boil for 3-4 minutes. Reduce heat to a simmer and let simmer for 35 minutes.
  2. While chili is cooking, prepare sweet potatoes. You can microwave the sweet potatoes for 3-4 minutes on each side or bake in the oven at 425 degrees for 45 minutes.
  3. Let the sweet potatoes cool some to the touch and then peel the skin off of the potatoes, putting the “meat” of each potato into a separate bowl for each person. Lightly mash the potatoes in the bowl.
  4. Once the chili is done simmering, use a ladle to scoop the chili onto the sweet potatoes.
  5. Top with Greek yogurt, shredded cheese, or sliced scallions.
  6. Enjoy!
