Unstuffed Bell Peppers–Quick & Easy Recipe

Who’s ready for a quick dinner recipe? Do you love the flavors of stuffed bell peppers, but not the time involved in the stuffing and baking? Then this Unstuffed Bell Peppers is the recipe for you!

This quick meal is a family favorite and it’s one of those meals that you can throw together with just a few ingredients and fill everyone up!

Unstuffed bell peppers over rice using mini sweet peppers

Ingredients

  • 3 large bell peppers, chopped (or a bag of mini peppers, sliced)
  • 1 lb ground beef (we use 1.5 lbs for our family of 4)
  • 1/2 cup chopped onions
  • 1/2 cup chopped parsley
  • 1 can diced tomatoes
  • salt and pepper
  • 1 tsp olive oil
  • 1 TBSP chopped garlic

Directions:

  1. In a non stick skillet with high sides, saute onions and garlic in olive oil over medium high heat about 4-5 minutes or until onions are softened.
  2. Add ground beef to skillet and cook until meat is browned.
  3. Once meat is browned, add diced tomatoes and bell peppers. Cook until bell peppers have softened some.
  4. Add parsley and mix thoroughly.
  5. Add salt and pepper to taste.
  6. Eat and enjoy!

Recipe Options

Serve it over something else

We’ve modified the recipes a few times. We’ve served it over Jasmine Rice and also over smashed-baked sweet potatoes.

Add mushrooms

We’ve also added chopped mushrooms to the mix (add-in with the tomatoes). Adding mushrooms adds some extra vitamins and stuffing to the volume you can serve, especially if you want less meat or only have 1 lb of ground beef but have more big eaters at your house.

Change up your tomatoes

If you’d prefer you can use 2 cups of fresh chopped tomatoes instead of canned tomatoes. Or what we like to do is use a can of fire-roasted tomatoes to make the dish a bit warmer.
