Slow Cooker Pork Verde

This Slow Cooker Pork Verde is a great meal for one of those days when you really don’t want to spend a lot of time in the kitchen over an oven or a stove.

It’s quick to prep and throw together in the slow cooker or crock pot. Then you walk away for 4 hours and come back ready to eat!

The red cabbage and radishes add a nice crunch to this meal and go very well with the pork. If you are new to radishes be aware that they have a little natural heat to them, similar to pepper or horseradish.

Ingredients:

  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  • 3 lb boneless pork loin
  • 1 TBSP olive oil
  • 1 medium onion, chopped
  • 2 TBSP garlic, minced
  • 1 jalapeno, sliced
  • 1 can tomatillos
  • 1 red cabbage, thinly sliced
  • fresh cilantro, chopped
  • fresco queso
  • 8 radishes, thinly sliced

Directions:

  1. Combine cumin, coriander, salt, pepper, and oregano together and rub all over the pork loin. Heat olive oil in a large skillet and sear pork loin on all sides.
  2. Add chopped onion and garlic to the slow cooker. Place seared pork loin on top of onion and garlic. Add the can of tomatillos and jalapeno slices to slow cooker around and on top of the pork. Cook on high for 4 hours.
  3. After 4 hours, shred pork back into the slow cooker.
  4. Serve pork in bowls over the sliced cabbage and radishes. Top with fresco queso and cilantro.
