Sautéed Sweet Carrots

These sautéed carrots are sweet and easy to prepare. They make a great side dish for any meal or for special occasions.

The great thing about carrots is that you can season and flavor to work with just about any kind of meal.

Ingredients:

  • 2 lbs of carrots (about 12-14 carrots)
  • 1/3 cup water
  • 1/3 cup brown sugar
  • 2 TBSP butter
  • 1 TSP salt
  • 1/4 TSP black pepper

Directions:

  1. Clean and cut carrots in 1/4 inch slices.
  2. Bring water, salt, and pepper to a boil in a 10″-12″ sauté pan.
  3. Add carrots. Reduce heat to medium low, cover, and simmer carrots for 10-15 minutes or until tender.
  4. While carrots are cooking, heat brown sugar and butter in a small pan, stirring constantly until the mixture is bubbly. Be careful not to burn!
  5. Drain any remaining water off of the carrots and combine cooked carrots with sugar and butter mixture. Enjoy!
