This is a family favorite recipe. These protein bites are so delicious and can be used as a healthy afternoon protein snack or as a healthy after dinner treat.
That’s probably why they get eaten so quickly at our house! LOL
No-Bake Protein Bites
Ingredients:
- 1 cup rolled oats
- 3/4 cup unsweetened shredded coconut
- 1 scoop chocolate protein powder (We like this brand here.)
- 2 TBSP natural almond or other nut butter
- 1/2 cup ground flax meal
- 1/2 cup dark chocolate chips
- 2/3 cup unsweetened coconut milk
- 1 tsp vanilla extract
In a large bowl mix all ingredients together except 1/4 cup of the shredded coconut. Chill in the refrigerator for half an hour. Roll the mixture into 1″-2″ balls and then roll in in the remaining 1/4 cup of shredded coconut. Keep in an air tight container in the refrigerator until ready to eat.
We’ve also dipped them in melted chocolate to use them as a Christmas cookie!
