Fresh Sweet Potato Casserole

This fresh sweet potato casserole is a healthier take on the traditional sweet potato casserole which is usually drowning in different sugars.

In this recipe, we’ve cut back the sugar and allowed the sweetness of the potatoes themselves to shine through.

Ingredients:

  • 3-4 lbs sweet potatoes (about 5 medium potatoes)
  • 1/3 cup honey
  • 1 egg
  • 1 TBSP brown sugar
  • 1/3 cup chopped pecans
  • salt
  • 1 TSP cinnamon
  • 1/4 TSP nutmeg

Directions:

  1. Preheat the oven to 350 degrees and coat a casserole dish with olive oil spray.
  2. Peel and cube the sweet potatoes into 1″ pieces.
  3. Add the sweet potato to a large microwaveable bowl with about 1/2 cup of water. Cover and cook for 4 minutes. Stir and check for tenderness. If needed continue to cook in 4 minute increments until soft.
  4. Drain any remaining water off of the cooked potatoes.
  5. Add in honey, egg, cinnamon, nutmeg, and 1/2 TSP salt. Whip with electric mixer until smooth.
  6. Transfer to the oiled casserole dish and smooth down firmly.
  7. Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in together and sprinkle over the potatoes.
  8. Bake until hot and beginning to brown around the edges, about 40 to 45 minutes.
